Kaiserschmarrn

There are many assumptions about the origin of the traditional "Kaiserschmarren". Schmarren was first mentioned in 1563 in a wedding sermon, which spoke of "feisty" Schmarren. The fact is, this popular, simple dessert made of flour, sugar, milk and eggs was refined with raisins and finally served with plum roast. This turned a former lumberjack's meal into one of Austria's most popular desserts. In our kitchen at DasEulersberg in Salzburg's Pongau region, Kaiserschmarren is also on the daily menu. It is served traditionally with raisins, of course, Chef Joe also responds to the individual wishes of our guests and serves applesauce or vanilla sauce.
